When roasting the El Jaguar Dark Roast Mexican coffee, we listen for the second crackle. Producing a coffee that certainly wowed both our customers and team in a blind tasting.
This El Jaguar Dark Roast coffee comes from a group of small producers in Mexico. This coffee comes from the high-altitude area of the Sierra Madre, bordering the biosphere reserve El Trifuno.
The weather is humid with lots of shade, cool conditions at night and excellent soil, which together create a perfect environment for the development of specialty coffee.
A small group of producers harvest and process the El Jaguar. Following harvesting, it is de-pulped, fermented and washed, before it is sun-dried.

Harvest Period: December through March

Lovely coffee and great value especially with the 3 for 2 on kg packs. My only problem is trying to decide whether to go with this again or try something else…
