This coffee originates from a farm called Tapantuguste in the Juayua region of El Salvador, in the west of the country. Situated on the western flanks of the Santa Ana volcanic region, the soil is richly suited to the growth of high grade coffee.
With an average temperature of 25 Celcius, and predictable rainfall, the farm is known as “Full of Clouds”.
The farm has been run as a cooperative since 2007.
As Bourbon varieties are prone to coffee rust, great care needs to be taken with its’ cultivation. We believe this care is reflected in our roasting. We have taken the Tapantugusto bean to a dark, but restrained roast.
This results in a coffee that has real depth in its’ flavours, producing a well balanced acidity, with a smooth mouthfeel.
As with most of the farms in the Republica Cafetalera Cooperative, this coffee is Rain Forest Alliance accredited.
